Tomí is a Roman-style pizza and aperitivo bar in Balaclava, Victoria.

We created Tomí to bring Rome’s most iconic street food — Pizza al Taglio — out of the street and onto the table, the way it deserves to be enjoyed: hot, crisp, shared, and paired with a proper drink.

Our venue is intentionally cozy, warm, and aperitivo-style — designed for people who want to sit in, unwind, and enjoy this Roman tradition the Italian way: with wine, cocktails, and time.

At night, Tomí becomes a full aperitivo experience, where pizza meets Italian piatti, small bites, and a curated wine list.

We don’t cut corners — not on flour, fermentation, tomatoes, cheese, or technique. Everything on our menu is there for a reason: flavour, balance, and authenticity.

Our Pizza al Taglio is baked in trays and served by the slice, defined by texture: a crisp base, a light airy interior, and a dough with real structure and flavour.
​
Our dough is made using a crafted blend of premium flours imported from top Italian mills, then fermented for 72 hours before it ever hits the oven.
​
Toppings are intentional and regionally inspired — balanced, traditional, and never overloaded.
​
Behind the bar, we serve Italian cocktail classics, signature drinks, and a tightly curated wine list featuring mostly Italian labels, plus a few Australian wines selected specifically to match the food.

Tomí is not a “pizza shop", that misses the point.
It’s real Roman technique, top-quality ingredients, and the authentic product — done properly, without shortcuts.
